Recently I’ve become obsessed with collard green wraps. (Maybe it’s because I’m mourning my upcoming move out of the South.) I decided to try them when I became bored with the usual sandwich/salad/soup rotation I’m always on for lunch, and I was pleasantly surprised by what a wonderfully firm, crunchy texture the leaves have, and how many different filling combinations there are to try. These are a great choice no matter your dietary requirements, but they are especially convenient for those of you who are vegan or trying out the Whole 30.
Collard green wraps look outrageously healthy, and this is one of those times that you can judge a book by its cover: these nutritional powerhouses help to lower cholesterol and prevent cancer, plus they are a superb source of many essential vitamins and antioxidants. I can also vouch for the fact that eating them regularly will do wonders for your hair and skin. I’ve been a green smoothie drinker for a long time, but it was adding collards to my diet that really improved my complexion.
I personally like to enjoy collard wraps as an easy alternative to lunchtime sandwiches, but they also make a great base for dinners, snacks, and even breakfast. Try out one of these recipes and start feeling those sweet benefits inside and out.
1) Collard Green Wraps With Rainbow Veggies & Peanut Sauce by Whole Living Lauren
As the name indicates, these wraps not only taste great—they’re pretty to look at! This combination offers a crunchy texture, slightly sweet taste, and the extra-filling addition of quinoa to keep you full.
2) Collard-Wrapped Bean Burritos by the Food Network
Calling all Chipotle fans! For those nights when you really want a burrito but also can’t justify the expense of eating out, try making a different, leafier kind at home.
3) Raw Vegan Collard Wraps by Avocado Pesto
Are you interested in adding more raw meals to your diet? This is the perfect place to start. The filling contains pecans, which is a source of healthy unsaturated fat. And really, isn’t this the perfect dish for the summertime?
4) Egg White Collard Wrap by Pancake Warriors
For those of us who adore breakfast sandwiches, this recipe is a godsend. Pancake Warriors are keeping it tasty and healthy with egg whites and sundried tomatoes, but I personally like to add a little bacon to the mix.
